Ingredients
2¼ cups all-purpose flour
2 teaspoons ground ginger
1 teaspoon cinnamon
½ teaspoon ground cloves
½ teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon salt
¾ cup unsalted butter, softened
1 cup granulated sugar (plus more for rolling)
1 egg
¼ cup molasses
1½ teaspoons vanilla bean
Instructions
1. Whisk dry ingredients together in a large bowl.
2. In a separate bowl, beat butter and sugar until fluffy.
3. Add the egg, molasses, and vanilla. Mix until well combined.
4. Gradually stir in the dry ingredients.
5. Chill dough for 30 minutes if too soft.
6. Roll dough into 1-inch balls, coat in sugar, and place on baking sheet.
7. Bake at 350°F for 10–12 minutes.
8. Cool on the pan for 5 minutes, then transfer to a wire rack.
Notes
Optional: Use brown sugar for deeper flavor.
Add candied ginger or fresh grated ginger for extra zing.
Drizzle with lemon glaze or add white chocolate chunks for a twist.
