Ingredients
3 cups all-purpose flour
3/4 cup packed brown sugar
1/2 cup molasses
1 large egg
2 tsp ground ginger
1 tsp cinnamon
1/2 tsp cloves
1/2 tsp baking soda
1/4 tsp salt
3/4 cup unsalted butter
Instructions
1. In a large bowl, cream butter and sugar until fluffy. Add molasses and egg, mixing until smooth.
2. In a second bowl, whisk flour, spices, baking soda, and salt.
3. Slowly mix dry ingredients into wet until combined. Turn dough onto plastic wrap and flatten into a disc.
4. Chill for at least 30 minutes. Preheat oven to 350°F and prep baking trays.
5. Roll dough to 1/4-inch thickness on a floured surface. Cut out cookies with cutters.
6. Bake for 10–12 minutes, rotating tray halfway through.
7. Let cool completely. Decorate with icing, chocolate, or sprinkles as desired.
Notes
For softer cookies, bake slightly less and cool on the tray.
To keep cookies soft, store with a slice of bread in an airtight tin.
Freeze baked cookies or raw dough discs for up to 3 months.
Customize with orange zest, pumpkin spice, or white chocolate dips.
