Description
A creamy, herb-packed Green Goddess dressing made with avocado, Greek yogurt, and fresh herbs. A flavorful, healthy sauce perfect for salads, dips, and more.
Ingredients
1 cup fresh parsley (flat-leaf), packed
1/2 cup chives, chopped
2 tablespoons fresh tarragon
1 small avocado (ripe)
1/2 cup Greek yogurt (or vegan yogurt)
2 tablespoons lemon juice
2 garlic cloves
1/3 cup olive oil
Salt and black pepper, to taste
Instructions
1. Add herbs, avocado, yogurt, lemon juice, and garlic into a food processor or blender. Pulse until coarsely chopped.
2. Slowly drizzle in olive oil while blending until smooth and creamy.
3. Taste and adjust. Add more lemon for tang, or blend in jalapeño if you want heat.
4. Pour into a jar. Store in the refrigerator for up to 5 days.
Notes
Add an ice cube before blending for a fluffier, emulsified texture.
Substitute avocado with tahini, or yogurt with coconut yogurt for dairy-free.
Pairs well with salads, roasted veggies, and as a dip or sandwich spread.
