One-Pan Ground Beef and Veggie Skillet

Description

A quick and flavorful dinner using lean ground beef, vibrant vegetables, and rice—all cooked in one skillet.


Ingredients

1 lb ground beef (93% lean)

1 medium onion, diced

2 garlic cloves, minced

1 bell pepper, chopped

1 zucchini, sliced

1 ½ cups cooked brown rice

1 cup corn (fresh or frozen)

½ teaspoon smoked paprika

½ teaspoon dried oregano

Salt and pepper to taste

1 tbsp olive oil

Juice of ½ lime

Fresh parsley or cilantro


Instructions

Heat olive oil in a skillet over medium heat and sauté onion and garlic for 2 minutes.

Add ground beef, cook until browned, around 6 minutes. Drain excess fat.

Stir in bell pepper, zucchini, and corn. Cook 5 minutes until softened.

Add brown rice, paprika, oregano, salt, and pepper. Cook for 3 more minutes.

Turn off heat, add lime juice, top with herbs, and serve hot.

Notes

Substitute brown rice with quinoa or couscous.

For added spice, include a pinch of cayenne or red pepper flakes.
