Description

This ground beef sweet potato bowl is a fast, wholesome meal perfect for any night. It’s packed with flavor, meal prep–friendly, and easy to customize with global twists.


Ingredients

1 medium sweet potato (peeled, diced)

1/2 lb lean ground beef

1 tbsp olive oil

1/2 red onion (thinly sliced)

1 clove garlic (minced)

1/2 tsp smoked paprika

1/4 tsp cumin

Salt and black pepper to taste

Optional toppings: avocado, lime wedges, cilantro, pickled jalapeños


Instructions

1. Preheat oven to 400°F. Toss sweet potato cubes with half the olive oil, salt, and pepper. Spread on a baking sheet and roast for 20–25 minutes, flipping halfway through.

2. Heat the remaining olive oil in a skillet over medium. Add red onion and cook for 3–4 minutes until softened. Stir in garlic and cook for another minute.

3. Add ground beef to skillet, breaking it up with a spatula. Cook for 6–8 minutes until browned. Stir in smoked paprika, cumin, salt, and pepper. Let flavors meld for 2 more minutes.

4. Divide roasted sweet potatoes into bowls. Top with ground beef mixture and desired toppings.

5. Serve warm and enjoy!
