Ingredients
2 1/4 cups all-purpose flour
1 tsp baking soda

3/4 cup granulated sugar
3/4 cup brown sugar
2 large eggs (or flax eggs)
2 tsp vanilla bean

Instructions
1. Cream room-temp butter and sugars together for 3–4 minutes until fluffy.
2. Add eggs (or flax substitute) and vanilla bean; mix well.
3. In a separate bowl, whisk flour, baking soda, salt, and spices.
4. Gradually mix dry into wet ingredients. Avoid over-mixing.
5. Fold in chocolate chips or desired mix-ins.
6. Chill dough for at least 30 minutes.
7. Preheat oven to 350°F (177°C) and line trays with parchment paper.
8. Scoop dough into 1.5 tbsp portions, spacing evenly on tray.
9. Bake for 10–12 minutes until edges are set.
10. Cool on tray 5 minutes, then transfer to wire rack.
