Fudgy, festive chocolate cranberry cake bars made with pantry staples. Freezer-friendly and great for gifting or holiday parties.
Ingredients
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup brown sugar
1/2 cup granulated sugar
2 large eggs
1/2 cup neutral oil or melted coconut oil
1 tsp vanilla extract (alcohol-free)
1/4 cup brewed decaf coffee or strong chai tea
1/2 cup dairy-free yogurt or applesauce
1/2 cup dark chocolate chips
1/2 cup dried cranberries
Optional: powdered sugar or drizzle
Instructions
Preheat oven to 350°F and prepare a square baking dish.
Whisk dry ingredients (flour, cocoa, soda, salt) together.
Beat sugars, eggs, oil, vanilla, and coffee in a separate bowl.
Add yogurt or applesauce and mix until smooth.
Stir in dry ingredients until just combined.
Fold in chocolate chips and cranberries.
Spread batter evenly into the pan and bake for 25 minutes.
Cool completely before cutting into squares and garnishing.
Notes
Bars freeze well individually wrapped.
Add white chocolate for festive contrast.
