Ingredients
1 lb carrots (peeled and cut evenly)
2 tablespoons honey (raw or organic preferred)
1 tablespoon olive oil (or avocado oil)
Salt & pepper to taste
Optional fresh thyme or rosemary
Instructions
1. Preheat the oven to 400°F.
2. Rinse, peel, and cut carrots into even-sized sticks.
3. Toss carrots in olive oil, honey, salt, and pepper. Add herbs if using.
4. Spread on a parchment-lined baking sheet without crowding.
5. Roast for 15 minutes, then flip.
6. Roast an additional 10–15 minutes until golden and tender.
7. Optionally drizzle with warm honey before serving.
