Ingredients

2 tbsp olive oil

1 large yellow onion, diced

3 garlic cloves, minced

1 green bell pepper, chopped

1 lb ground beef or turkey

1 (14.5 oz) can diced fire-roasted tomatoes

1 (6 oz) can tomato paste

1 (15 oz) can kidney beans, drained

1 (15 oz) can black beans, rinsed

1 cup beef or vegetable broth

1 tbsp chili powder

1 tsp ground cumin

1/2 tsp smoked paprika

1 tsp salt

1/2 tsp black pepper

1 tsp brown sugar (optional)


Instructions

Set Instant Pot to SAUTÉ and add oil, onion, and bell pepper; cook for 5 minutes.

Add garlic and meat, cooking until browned.

Stir in tomato paste, tomatoes, beans, broth, and spices.

Set to PRESSURE COOK on HIGH for 15 minutes; allow natural release for 10 minutes.

Stir, taste, and serve with desired toppings.

Notes

Add frozen corn for texture variety.

Swap beef for turkey or meatless crumbles for a vegan option.
