A fast, flavorful one-pot meal featuring tender chicken, fluffy basmati rice, and bold seasonings—all pressure-cooked to perfection in under 40 minutes.
Ingredients
1.5 lbs boneless skinless chicken thighs
1 cup basmati rice, rinsed
1 yellow onion, diced
1 red bell pepper, chopped
3 garlic cloves, minced
2 cups low-sodium chicken broth
1 tsp smoked paprika
½ tsp turmeric
Salt & pepper to taste
2 tbsp olive oil
Chopped fresh cilantro (optional for garnish)
Instructions
Turn on Instant Pot to Sauté mode. Add olive oil, diced onion, and garlic. Stir for 2–3 minutes until fragrant.
Add chicken, salt, pepper, paprika, and turmeric. Cook for 3 minutes till sides are browned.
Mix in rinsed rice and bell pepper. Pour in broth and stir gently.
Seal lid. Set to Pressure Cook on HIGH for 12 minutes.
Allow pressure to release naturally for 5 minutes, then quick release the rest.
Open lid, fluff rice. Add chopped cilantro if using, then serve.
Notes
Use vegetable broth and plant-based protein for a vegetarian version.
Make it spicy with chili flakes or cayenne for extra heat.
