Ingredients
1 pound chicken breast, cubed
1 red bell pepper, cubed
1 green bell pepper, cubed
1 onion, quartered
3 tablespoons olive oil
2 tablespoons lemon juice
3 cloves garlic, minced
Salt and pepper to taste
Fresh herbs (parsley or thyme)
Instructions
Combine olive oil, lemon juice, garlic, salt, and herbs in a bowl.
Marinate chicken and vegetables in the mixture for at least 15 minutes.
Alternate chicken pieces with vegetables on skewers.
Grill on medium-high heat for 10–12 minutes, turning occasionally.
Notes
For a vegetarian option, substitute tofu for chicken.
Serve with quinoa or fresh salad.
