Description
A hearty and nutritious kale soup with potatoes and garlic.
Ingredients
2 bunches kale
3 cups diced potatoes
1 medium onion, chopped
3 cloves garlic, minced
4 cups vegetable broth
2 tablespoons olive oil
Salt and pepper to taste
Instructions
Wash and chop the kale. Dice the potatoes and chop the onions and garlic.
In a large pot over medium heat, sauté onions and garlic in olive oil until fragrant.
Add diced potatoes and cook for 5 minutes.
Stir in the kale and mix well.
Pour in the vegetable broth, season with salt and pepper, and let simmer until potatoes are tender.
