Ingredients
Scale
2 bunches of kale, chopped
3 russet potatoes, cubed
1 onion, diced
2 garlic cloves, minced
4 cups vegetable broth
2 carrots, sliced
Salt and pepper to taste
2 tbsp olive oil
Instructions
Chop kale, dice onions and carrots, cube potatoes.
Heat olive oil in a large pot; sauté onions and garlic until fragrant.
Add broth, potatoes, and carrots, simmer gently.
