Description

A creamy, cheesy baked casserole that transforms leftover chicken into a hearty family dinner with minimal prep.


Ingredients

2 cups chopped leftover chicken

1 can cream of mushroom soup

1.5 cups cooked rice

1 cup shredded cheddar cheese

1/3 cup sour cream or plain yogurt

1/2 tsp garlic powder

Salt and pepper to taste

Fresh parsley for garnish


Instructions

Preheat oven to 375°F.

In a large mixing bowl, combine chicken, soup, rice, sour cream, cheese, garlic powder, salt, and pepper.

Stir until evenly mixed.

Transfer the mixture into a greased baking dish.

Bake uncovered for 30–35 minutes until hot and bubbly.

Remove, let sit for 5 minutes, and garnish with chopped parsley before serving.

Notes

You can substitute cream of mushroom with cream of chicken or veggie broth + roux.

Add steamed broccoli or mushrooms for more texture.
