Description
Zesty, chewy, soft-baked lemon cookies made with fresh lemon juice and zest. Perfect for tea time or dessert.
Ingredients
2 ¾ cups all-purpose flour
½ tsp baking soda
¼ tsp salt
1 tbsp fresh lemon zest
3 tbsp lemon juice
1 cup unsalted butter, softened
1 ½ cups granulated sugar
2 large eggs
1 tsp vanilla extract (alcohol-free)
Instructions
Preheat the oven to 350°F. Line a baking sheet with parchment paper.
In a mixing bowl, whisk flour, baking soda, and salt. Set aside.
In another bowl, beat butter and sugar until light and fluffy.
Add eggs one at a time, then stir in vanilla, lemon juice, and zest.
Gradually add dry ingredients to wet until well combined.
Scoop dough and optionally roll in sugar. Chill for 30 minutes.
Place on baking tray, spaced 2 inches apart, and bake for 10–12 minutes.
Cool on a wire rack before serving.
Notes
Chill dough for best texture.
Massage lemon zest into sugar for deeper flavor.
Store in airtight container for up to 1 week.
