Ingredients
1 tablespoon olive oil
1 onion, finely chopped
2 garlic cloves, minced
1 can diced tomatoes
1 cup lentils, rinsed
4 cups vegetable broth
Salt to taste
1 teaspoon cumin
1 teaspoon paprika
3 cups fresh spinach
Instructions
Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until golden.
Stir in tomatoes, allowing them to soften before adding lentils.
Pour in vegetable broth and bring to a boil. Reduce heat and simmer for at least 30 minutes.
Season with cumin, paprika, and salt. In the final 10 minutes, add spinach and stir until wilted.
Serve hot, accompanied by crusty bread.
