Ingredients
1 cup lentils
1 onion, chopped
2 carrots, sliced
2 celery stalks, diced
4 cloves garlic, minced
1 can tomatoes, diced
4 cups vegetable broth
1 teaspoon cumin
1 teaspoon coriander
Salt and pepper to taste
1 tablespoon olive oil
Instructions
Heat olive oil in a large pot and sauté the onions, garlic, carrots, and celery until softened.
Add lentils, cumin, coriander, salt, and pepper. Stir to combine.
Pour in diced tomatoes and broth, bringing the mixture to a boil.
Reduce heat and let simmer for 30-40 minutes, or until lentils are tender.
Taste and adjust seasoning if needed.
Garnish with fresh herbs and serve hot.
Notes
For a creamier finish, add coconut milk just before serving.
