Ingredients
1 cup all-purpose flour
1/4 cup powdered sugar
1/2 cup unsalted butter, melted
2 large eggs
3/4 cup granulated sugar
1/4 cup fresh lime juice
1 tablespoon lime zest
2 tablespoons all-purpose flour
Instructions
Preheat oven to 350°F. Line and grease an 8×8 pan.
Combine flour, powdered sugar, and butter until crumbly. Press into pan and bake for 12 minutes.
Whisk eggs and sugar, then add lime juice, zest, and flour. Mix until smooth.
Pour mixture over crust. Bake an additional 13 minutes.
Cool at room temperature, refrigerate 30 minutes minimum. Slice and serve.
Notes
Use fresh lime juice for best flavor.
