Ingredients
2½ cups all-purpose flour
2 tsp baking powder
½ tsp salt
1 cup unsalted butter, softened
1 ¾ cups sugar
4 eggs
2 tbsp lime zest (from 3–4 limes)
⅓ cup fresh lime juice
¾ cup buttermilk or plant-based milk with 1 tsp vinegar
Instructions
Preheat oven to 350°F and prepare pans with parchment.
Cream butter and sugar until fluffy, 3–4 minutes.
Add eggs one at a time, then mix in lime zest and juice.
Whisk flour, baking powder, and salt in a bowl.
Alternate adding dry mix and buttermilk to butter mixture.
Pour batter into pans and smooth the top.
Bake for 50–55 minutes until golden and toothpick clean.
Cool 10 minutes in pan, then fully on wire rack.
Notes
Use fresh lime for best flavor.
Swap buttermilk with non-dairy milk for a lighter version.
