Ingredients
1 cup unsalted butter (softened)
1 1/2 cups granulated sugar
2 eggs
2 tablespoons fresh lime juice
1 tablespoon lime zest
2 ¾ cups all-purpose flour
1 tsp baking powder
1/4 tsp salt
Instructions
Preheat oven to 350°F and line baking sheets with parchment.
Cream butter and sugar until light and fluffy.
Beat in eggs, lime juice, and zest.
Combine flour, baking powder, and salt. Mix into the wet ingredients gradually.
Chill dough for 15 minutes for thicker cookies.
Scoop dough onto baking sheets, spacing 2 inches apart.
Bake for 9–11 minutes until edges are lightly golden.
Cool on sheet for 2 minutes before transferring to rack.
