Description

A quick, zesty lime vinaigrette that adds a bright citrus flavor to salads, vegetables, and more. Made with fresh lime juice, olive oil, and a touch of sweetness.


Ingredients

1/4 cup freshly squeezed lime juice

2 teaspoons lime zest

1/2 cup extra virgin olive oil

2 tablespoons honey or maple syrup

1 teaspoon Dijon mustard

1 small garlic clove, finely minced

1/4 teaspoon sea salt

1/8 teaspoon black pepper


Instructions

Zest and juice the limes into a bowl.

Add garlic, honey or maple, mustard, salt, and pepper. Whisk together.

Gradually add oil while whisking until emulsified.

Taste and adjust seasoning.

Store in a mason jar and shake before each use.

Notes

Use a microplane for better zesting.

Avocado oil works if you want a lighter taste.
