Ingredients

1/2 cup butter or fat drippings

1/2 cup all-purpose flour

4 cups stock or broth (turkey, beef, or veggie)

1/2 cup onion, diced

1/2 cup carrot, diced

1/2 cup celery, diced

2 cloves garlic

1 bay leaf

1 sprig fresh thyme

Salt and pepper to taste


Instructions

1. Melt butter in a saucepan over medium heat.

2. Add onion, carrot, and celery (mirepoix) and sauté until golden.

3. Sprinkle in flour and whisk for 2–3 minutes until golden brown.

4. Gradually pour in stock while whisking to prevent lumps.

5. Add garlic, bay leaf, and thyme. Simmer for 15–20 minutes.

6. Remove aromatics. Blend if desired for smooth texture.

7. Season to taste.

8. Cool completely and store in airtight containers in fridge (up to 4 days) or freezer (up to 3 months).

Notes

Use mushroom stock for a meatless version.

Add sausage crumbles for a heartier gravy.

Whisk in turkey drippings when reheating for enhanced flavor.

Freeze in flat layers for faster reheating.
