Ingredients
2 large ripe mangoes, diced
1 red bell pepper, finely chopped
1 small red onion, minced
1 jalapeño, seeded and minced
1/4 cup fresh cilantro, chopped
2 tablespoons fresh lime juice
Salt to taste
Instructions
Peel and dice the mangoes into small, even cubes.
Combine mangoes, chopped bell pepper, red onion, jalapeño, and cilantro in a mixing bowl.
Add lime juice and salt. Mix gently using a silicone spatula.
Cover and chill in the refrigerator for at least 20 minutes before serving.
Notes
Use ripe mangoes with slight give for best flavor.
For less spice, skip chili seeds or use sweet peppers.
Refrigerate leftovers in an airtight container up to 3 days.
