1 cup coconut or white sugar
¾ cup unsweetened coconut milk or oat milk
2 tablespoons non-dairy butter
Pinch of fine sea salt
Optional: ¼ cup chopped pecans
Instructions
In a saucepan, combine maple syrup, sugar, milk, and salt over medium heat.
Stir constantly until it starts boiling.
Insert candy thermometer and cook until the mixture reaches 234°F (soft-ball stage).
Remove from heat, add butter, and let sit 5 minutes.
Beat until thick and dull in appearance.
Fold in pecans if using and pour into parchment-lined pan.
Cool until firm, then cut into squares.
Notes
Use Grade A Dark Robust maple syrup for best flavor.
Let fudge cool slowly to avoid graininess.
