Description
A warm, sweet-savory side of tender carrots roasted in a maple-butter glaze with herbs—perfect for holidays or everyday meals.
Ingredients
1½ lbs carrots (baby or sliced whole)
¼ cup pure maple syrup
2 tbsp unsalted butter
½ tsp fresh thyme (or rosemary)
Salt and black pepper to taste
Instructions
1. Preheat your oven to 400°F.
2. Peel and cut carrots into 1-inch chunks or leave baby carrots whole.
3. In a small saucepan over low heat, melt butter and stir in maple syrup. Let it bubble gently until slightly thickened, about 2 minutes.
4. Toss carrots with the warm glaze, sprinkle with thyme, salt, and pepper.
5. Spread carrots on a parchment-lined baking tray in a single layer. Roast for 25–30 minutes, flipping once halfway.
6. Optional: Broil for 2 minutes for extra char. Finish with flake salt or chopped herbs.

Try adding spices like cinnamon, cumin, smoked paprika, or chili flakes for variation.
Use coconut oil or ghee for a dairy-free option.
Leftovers are great in flatbreads, grain bowls, or puréed into soup.
