Ingredients
1 ½ cups all-purpose flour
2 tbsp matcha powder, culinary grade
1½ tsp baking powder
¼ tsp sea salt
½ cup coconut oil
¾ cup organic cane sugar
3 large eggs
½ cup plain soy milk
1 tsp vanilla bean paste
Instructions
Preheat oven to 350°F. Grease and line a 9-inch cake pan.
In a large bowl, sift flour, matcha, baking powder, salt. Set aside.
In a separate bowl, whisk eggs and sugar until fluffy. Mix in vanilla, oil, and milk.
Combine wet and dry mixtures. Fold gently until just combined.
Pour batter into prepared pan. Bake 30 minutes or until toothpick test passes.
Cool 10 minutes in pan. Remove to rack and cool fully before frosting.
Notes
To freeze: cool completely, wrap airtight, freeze up to 2 months.
For gluten-free: replace flour with 1:1 bake mix including xanthan gum.
