Description

A rich, baked cheesecake infused with vibrant and earthy matcha flavor, perfect for any occasion.


Ingredients

Scale

1½ cups graham cracker crumbs

6 tablespoons melted unsalted butter

24 ounces cream cheese, softened

¾ cup granulated sugar

1 teaspoon pure vanilla powder

3 large eggs

¾ cup sour cream or plain Greek yogurt

2 tablespoons ceremonial grade matcha powder

Pinch of salt


Instructions

Preheat oven to 325°F.

Mix graham cracker crumbs and melted butter. Press into springform pan and bake for 8–10 minutes. Cool crust.

Beat cream cheese and sugar until smooth. Add vanilla, eggs, sour cream, matcha powder, and salt; mix well.

Pour batter over crust, place pan in water bath, and bake for 50-55 minutes.

Let cool in oven with door cracked for 1 hour, then chill in refrigerator at least 4 hours.

Notes

Use ceremonial matcha for best flavor and color.

Make ahead and freeze individual slices for easy serving.
