Rich, layered mint brownies with a fudgy chocolate base, creamy mint center, and smooth ganache topping.
Ingredients
1 cup unsalted butter, melted
2 cups granulated sugar
4 large eggs
1 cup all-purpose flour
¾ cup unsweetened cocoa powder
½ tsp baking powder
¼ tsp salt
1 tsp vanilla extract (alcohol-free)
½ tsp peppermint extract
2 cups powdered sugar
3 tbsp milk or almond milk
1–2 drops natural green food coloring
1½ cups semi-sweet chocolate chips
½ cup heavy cream
Instructions
Preheat oven to 350°F and prepare an 8×8 pan with parchment.
Melt butter, add sugar and vanilla, then beat in eggs until glossy.
Sift in flour, cocoa, baking powder, and salt. Stir until combined.
Pour batter into pan and bake for 35 minutes. Cool completely.
Mix powdered sugar, milk, peppermint extract, and coloring.
Spread mint layer over cooled brownie base and chill 20 min.
Melt chocolate chips with cream to make ganache and pour on top.
Chill brownies an additional 30 minutes before slicing.
Notes
Use strong cocoa for best brownie flavor.
Peppermint extract varies in strength—taste as you go.
Natural green coloring optional for aesthetics.
Freeze slices wrapped in parchment for individual treats.
