Ingredients
2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup butter, softened
1 cup brown sugar
1/2 cup granulated sugar
2 large eggs
1 ½ tsp peppermint extract (alcohol-free)
1 cup semi-sweet chocolate chips
Instructions
Preheat oven to 350°F and line baking sheets with parchment paper.
Whisk together flour, cocoa powder, baking soda, and salt.
Cream butter, brown sugar, and granulated sugar until fluffy.
Beat in eggs one at a time, then peppermint extract.
Gradually mix in dry ingredients.
Stir in chocolate chips.
Chill dough for 30 minutes.
Scoop dough into 1 ½ tbsp balls and place on baking sheet.
Bake 10–12 minutes until edges are set.
Cool 5 minutes on tray, then transfer to wire rack.
Notes
Keep dough chilled between batches for uniform shape.
Store with bread slice to retain cookie softness.
