This rich quiche is perfect for Mother’s Day, featuring creamy custard, fresh spinach, and nutty Gruyère cheese.
Ingredients
1 pre-made pie crust
5 large eggs
1 cup heavy cream
1 cup shredded gruyère cheese
2 cups fresh spinach, chopped
1 onion, finely diced
Salt and pepper to taste
Pinch of nutmeg
Instructions
Preheat oven to 375°F.
Roll out the pie crust into a tart pan, and prick the base with a fork.
Whisk eggs with cream, salt, pepper, and nutmeg.
Sauté onion until translucent, add spinach to wilt.
Spread onion and spinach over crust, sprinkle with cheese.
Pour egg mixture evenly over filling.
Bake for 45 minutes until quiche puffs and turns golden.
Notes
Substitute kale for spinach as desired.
Use cheddar cheese if gruyère isn’t available.
