Ingredients
1½ cups graham cracker crumbs
6 tbsp melted butter
16 oz cold cream cheese
1 can sweetened condensed milk
1 tsp vanilla bean
2 tbsp lemon juice
2 cups whipped topping or stiff whipped cream
Optional toppings: fruit, jam, caramel
Instructions
1. Crush graham crackers and mix with melted butter. Press into springform pan and chill for 15 minutes.
2. Beat cold cream cheese until smooth, then gradually mix in sweetened condensed milk.
3. Add vanilla bean and lemon juice; blend well.
4. Fold in whipped topping or stiff whipped cream until combined.
5. Pour filling over crust, smooth top, and chill at least 4 hours (preferably overnight).
6. Top with fruit, jam, or caramel before serving.
Notes
Use parchment paper on the base for easier removal.
Always chill longer for firmer slices.
Avoid overmixing to maintain structure.
