Ingredients
Old-fashioned rolled oats – 2 cups
All-purpose flour – 1 cup
Unsalted butter (softened) – 1 cup (2 sticks)
Brown sugar – 1 cup
Granulated sugar – 1/2 cup
Eggs – 2 large
Vanilla bean- 2 tsp
Baking soda – 1 tsp
Cinnamon (optional) – 1/2 tsp
Salt – 1/2 tsp
Chocolate chips – 1 1/2 cups
Instructions
1. Preheat the oven to 350°F. Line baking sheets with parchment paper.
2. In a large bowl, beat the softened butter with both sugars until light and fluffy.
3. Add eggs one at a time, beating well after each. Stir in vanilla.
4. In a separate bowl, whisk the flour, baking soda, cinnamon, and salt.
5. Slowly incorporate the dry mix into the wet mixture. Don’t overmix.
6. Fold in rolled oats and chocolate chips.
7. Scoop dough onto the baking sheet (2-tablespoon scoops spaced an inch apart).
8. Bake for 10–12 minutes until edges are golden.
9. Cool on tray for 2 minutes, then move to wire rack.
Notes
Use old-fashioned rolled oats, not instant, for best texture.
Add-ins like espresso powder, shredded coconut, or chopped nuts can elevate flavor.
Store in airtight container for up to 5 days or freeze dough for longer storage.
