Ingredients
3 large eggs
2 tbsp milk (or oat milk)
1/4 cup shredded cheese
1 tbsp olive oil or butter
Salt and pepper to taste
1/4 cup diced spinach
1/4 cup sliced mushrooms
Instructions
Crack eggs into a medium bowl and whisk with milk, salt, and pepper until slightly frothy.
Heat nonstick skillet over medium heat. Add oil or butter.
Pour in egg mixture, tilting pan to spread evenly.
Gently slide spatula around edges, pushing cooked egg inward.
When mostly set, add cheese, spinach, and mushrooms.
Fold omelet in half and cook 30 seconds more.
Slide onto plate and serve warm.
