Description
Flavor-packed one pot pasta where everything cooks together—pasta, sauce, veggies, and protein. Minimal cleanup and max comfort in 30 minutes.
Ingredients
8 oz penne or fusilli pasta
2 tbsp olive oil
3 garlic cloves, minced
1 small onion, diced
1 cup chopped mushrooms
1 cup baby spinach
1 cup halāl chicken, pre-cooked and chopped
3 cups vegetable broth
1/2 tsp salt
1/4 tsp ground black pepper
1/2 tsp dried basil
Optional: dairy-free cream or tahini for finishing
Instructions
Heat olive oil in a large nonstick pot over medium heat.
Sauté onions until translucent; add garlic and stir until fragrant.
Toss in mushrooms and chicken; cook for 3–4 minutes until browned.
Add uncooked pasta, broth, spinach, salt, pepper, and basil.
Bring to a boil, reduce heat, and simmer uncovered, stirring occasionally.
After 15–18 minutes, check pasta; when done, stir in optional tahini or cream.
Serve hot with fresh herbs on top.
Notes
Pasta shapes like penne, rotini, or shells hold well in one pot recipes.
Add your own seasonings like chili flakes or lemon zest for a fresh lift.
