Crispy, flavorful roasted asparagus sprinkled with rich parmesan—a healthy and satisfying side dish that’s easy to prepare in under 30 minutes.
Ingredients
1 bunch of fresh asparagus, trimmed
2 tablespoons olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/2 cup grated parmesan cheese
1/2 teaspoon garlic powder (optional)
Zest of half a lemon (optional)
Instructions
Preheat oven to 400°F.
Trim woody ends from asparagus.
Toss asparagus with olive oil, salt, pepper, and garlic powder.
Spread on a baking sheet in single layer.
Top with half of the parmesan cheese.
Roast for 12–15 minutes until spear tips are crispy.
Sprinkle remaining parmesan and roast an additional 2 minutes.
Top with lemon zest before serving (optional).
Notes
Use avocado oil for a different flavor.
Add crushed almonds for a nutty twist.
Pairs well with grilled chicken or lemon pasta.
