A delightful pasta soup with rich flavors and customizable ingredients for a comforting meal.
Ingredients
1 tablespoon olive oil
1 onion, chopped
2 carrots, diced
2 celery stalks, diced
2 cloves garlic, minced
1 teaspoon dried thyme
3 cups chicken or vegetable broth
1 can (14 oz) diced tomatoes
1 cup pasta
1 cup spinach or kale
Salt and pepper to taste
Optional: 1 cup shredded chicken
Instructions
In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Cook until they soften. Add garlic and thyme.
Pour in broth and bring to a gentle boil. Stir in tomatoes and season to taste.
Add pasta; reduce heat and let simmer until pasta is al dente. If using, add chicken near the end.
Add spinach and cook until wilted. Adjust seasoning and serve.
Notes
Substitute pasta with chickpea pasta or spiralized zucchini for variation.
Add red pepper flakes for spice.
