Buttery crust, fresh peach filling, and a golden oat crumble—these southern peach bars are the ultimate summer dessert.
Ingredients
1 1/2 cups all-purpose flour
1/2 cup granulated sugar
1/4 teaspoon salt
3/4 cup unsalted butter, cold and cubed
3 cups fresh peaches, peeled and sliced
2 tablespoons cornstarch
1/4 cup brown sugar
1/2 teaspoon cinnamon
1 teaspoon lemon juice
1/2 cup oats (for topping)
1/3 cup flour (for topping)
1/4 cup brown sugar (for topping)
1/4 cup unsalted butter, cold and cubed (for topping)
Instructions
Preheat the oven to 350°F and line an 8×8 baking dish.
Mix flour, sugar, salt for crust; cut in butter until crumbly. Press into pan and bake for 10 minutes.
Toss peaches with cornstarch, brown sugar, cinnamon and lemon juice.
Spread peaches onto par-baked crust.
Mix topping ingredients; sprinkle over peaches.
Bake for 35–40 minutes until bubbling and golden.
Cool fully before slicing and serving.
Notes
Use fresh peaches when in season for best results.
Freeze well-wrapped bars for up to 3 months.
Add pecans or blueberries for tasty variations.
