A moist and aromatic peach cake created with ripe peaches, cinnamon, and simple pantry staples. Inspired by Southern kitchens and modern online trends.
Ingredients
1 ¾ cups all-purpose flour
2 tsp baking powder
½ tsp salt
1 tsp ground cinnamon
⅓ cup unsweetened applesauce
¾ cup sugar or coconut sugar
2 large eggs
1 ½ tsp non-alcoholic vanilla extract
½ cup almond or oat milk
2 cups sliced fresh peaches
Instructions
Preheat the oven to 350°F.
Grease or line a 9-inch cake pan with parchment.
Whisk flour, baking powder, salt, and cinnamon in a bowl.
In another bowl, mix applesauce, sugar, and eggs until fluffy.
Stir in vanilla and milk, then add dry ingredients gradually.
Pour half of the batter into the pan.
Layer half the peach slices, then repeat with remaining batter and peaches.
Sprinkle cinnamon-sugar on top.
Bake for 45-50 min until the top turns golden and a toothpick comes out clean.
Cool on a wire rack before slicing.
Notes
Use canned or frozen peaches when fresh aren’t available.
Skillet-style baking yields a crispier base.
Add cardamom or almond slices for variation.
