Description

A cozy, golden-crusted peach pie with sweet, spiced filling—perfect for any season.


Ingredients

6 large ripe peaches (or 5 cups sliced peaches)

3/4 cup organic cane sugar

2 tbsp cornstarch

1 tsp vanilla extract (non-alcoholic)

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

2 tbsp lemon juice

1 double pie crust (homemade or store-bought)


Instructions

Preheat oven to 425°F.

Peel peaches (optional) by blanching. Slice them.

Mix peaches with sugar, lemon juice, cornstarch, and spices.

Roll out bottom crust and place into pie plate.

Add filling and cover with top crust. Crimp edges.

Bake at 425°F for 20 minutes, then reduce to 375°F for 30 minutes.

Cool at least 15 minutes before serving.

Notes

Sub fresh peaches with thawed frozen ones.

Spice it up with cardamom or almond essence.

Use crust shield to avoid burnt edges.
