Description
A simple yet rich pear cake made with fresh pears, coconut sugar, warm spices, and your favorite plant-based milk. Moist, delicious, and perfect for any time of day.
Ingredients
2 large ripe pears, peeled and diced
1¾ cups all-purpose flour
½ cup almond flour
2 large eggs
½ cup extra-virgin olive oil
½ cup coconut sugar
1 tsp baking powder
½ tsp baking soda
¼ tsp fine sea salt
1 tsp ground cinnamon
¼ tsp nutmeg
1 tsp vanilla extract (alcohol-free)
½ cup almond milk
1 tbsp lemon juice
Instructions
Preheat oven to 350°F (177°C). Lightly oil a 9-inch round or loaf pan.
In a bowl, combine flour, almond flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
In another bowl, whisk eggs with coconut sugar. Add oil, milk, lemon juice, and vanilla; mix well.
Fold wet ingredients into dry using a spatula. Do not overmix.
Fold in diced pears evenly.
Pour batter into pan, smooth top, and optionally decor with sliced pear.
Bake for 45–50 minutes or until a toothpick comes out clean.
Cool for 10–15 mins before transferring to wire rack. Slice and serve.
Notes
Substitute eggs with flax eggs for a vegan variation.
Lower sugar by 25% without affecting the texture.
Pairs excellently with herbal tea or dairy-free ice cream.
