Ingredients
2 ripe pears (Bosc or Anjou, thinly sliced)
5 oz mixed greens (arugula, spinach, or mesclun)
1/3 cup Gorgonzola cheese, crumbled
1/4 cup candied walnuts (or toasted pecans/almonds)
1/4 red onion, thinly sliced
2 tbsp olive oil
1 tbsp white balsamic vinegar
1 tsp Dijon mustard
1 tsp honey
Instructions
1. Rinse and dry the greens thoroughly.
2. Slice the pears into thin wedges.
3. Place red onion slices in ice water for 5 minutes.
4. In a bowl, whisk olive oil, balsamic, Dijon, and honey.
