Ingredients
2 cups all-purpose flour
1 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter, softened
1 cup white sugar
1 large egg
1 cup crushed pineapple (lightly drained)
1 tsp halal vanilla extract
Instructions
Preheat oven to 350°F (180°C) and line baking sheets with parchment.
Cream butter and sugar until light and fluffy.
Add egg and vanilla, beat until smooth.
Stir in crushed pineapple just until mixed.
In another bowl, whisk flour, baking powder, and salt together.
Gradually stir dry ingredients into wet mixture.
Scoop dough onto parchment-lined sheet in rounded tablespoons.
Bake for 12–14 minutes until barely golden around edges.
Cool on wire rack before serving or storing.
Notes
For spiced version, add 1/4 tsp ground ginger or cinnamon.
Add crushed walnuts or coconut flakes for added texture.
Use parchment or silicone baking mats for easiest cleanup.
