A nostalgic, no-bake dessert made with pistachio pudding, whipped topping, and a crunchy graham cracker crust. Creamy, easy, and perfect for entertaining.
Ingredients
1 package (3.4 oz) instant pistachio pudding mix
1 ½ cups cold whole milk (or plant-based milk)
8 oz whipped topping (like Cool Whip), thawed
4 oz mascarpone cheese (optional)
1 pre-made or homemade 9-inch graham cracker crust
¼ cup chopped pistachios + extra for garnish
Instructions
In a large bowl, whisk milk and pistachio pudding mix for 2 minutes until slightly thick.
Fold in mascarpone cheese (optional), then fold in whipped topping until blended.
Gently stir in ¼ cup chopped pistachios.
Spoon mixture into the graham cracker crust and smooth the top.
Garnish with extra whipped topping and pistachios.
Cover and refrigerate for at least 4 hours before serving.
Notes
Mascarpone adds richness but is optional.
Freeze for up to 1 month; thaw in fridge before serving.
For crunchier texture, toast pistachios before folding in.
