Description

A moist, fruity, and aromatic plum cake made with fresh plums, cinnamon, and simple pantry staples.


Ingredients

1 ½ cups all-purpose flour

1 ½ tsp baking powder

¼ tsp salt

¾ cup sugar

½ cup sunflower oil

2 large eggs

½ cup almond milk

68 ripe plums, halved and pitted

½ tsp cinnamon


Instructions

Preheat oven to 350°F. Line a 9-inch round pan with parchment.

In a bowl, whisk flour, baking powder, salt, and cinnamon.

In another bowl, whip sugar and eggs until light and fluffy.

Gradually mix in oil and almond milk.

Fold in dry ingredients until just combined.

Pour batter into pan. Arrange halved plums cut-side-up.

Bake for 45–50 minutes until toothpick comes out clean.

Cool 10–15 minutes before removing from pan and serving.

Notes

Use ripe plums for best flavor.

Freeze slices individually for up to 2 months.

Add chopped nuts for a crunchy touch.
