Ingredients
1 cup canned pumpkin purée
1/2 cup coconut oil
3/4 cup light brown sugar
1 teaspoon vanilla extract (alcohol-free)
1 1/2 cups all-purpose flour (or gluten-free blend)
1 teaspoon baking soda
1 tablespoon pumpkin pie spice
Pinch of salt
1/2 cup dark chocolate chips (optional)
1/4 cup chopped pecans (optional)
Instructions
Preheat oven to 350°F and line baking sheets with parchment.
Mix pumpkin, oil, sugar, and vanilla in a bowl until smooth.
In another bowl, whisk dry ingredients.
Combine wet and dry mixtures and add optional mix-ins.
Chill dough for 20 minutes.
Scoop dough onto baking sheets.
Bake 10–12 minutes until set.
Cool on sheets for 5 minutes, then transfer to racks.
Notes
Chill dough to enhance cookie structure.
Store in an airtight container up to 4 days or freeze.
