Ingredients
1¾ cups all-purpose flour
1 tsp baking soda
2 tsp pumpkin pie spice
½ tsp sea salt
2 large eggs
¾ cup brown sugar
1 cup pure pumpkin purée
½ cup olive or avocado oil
1 tsp vanilla extract (alcohol-free)
Optional: ½ cup chocolate chips, chopped nuts, or dried fruit
Instructions
Preheat oven to 350°F. Line a 12-cup muffin pan.
Mix flour, baking soda, salt, and spices in one bowl.
In another bowl, combine eggs, sugar, pumpkin, oil, and vanilla.
Gently combine wet and dry ingredients; do not overmix.
Fold in any preferred add-ins.
Scoop into muffin cups ¾ full.
Bake for 22-24 minutes until a toothpick comes out clean.
Cool before serving or storing.
