Pumpkin muffins that blend nostalgic fall flavors with a modern, moist texture—made with real pumpkin, warm spices, and a touch of southern charm.
Ingredients
1 cup pumpkin puree
1/2 cup dark brown sugar
1/4 cup pure maple syrup
2 large eggs
1/3 cup neutral oil (canola, grapeseed, or coconut)
1 tsp vanilla bean
1 & 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
2 tsp pumpkin pie spice
1/2 tsp salt
Optional: turbinado sugar or chopped pecans for topping
Instructions
1. Preheat oven to 350°F and line a muffin tin with liners.
2. Whisk together pumpkin, sugar, maple syrup, eggs, vanilla, and oil until smooth.
3. In another bowl, mix flour, baking soda, baking powder, salt, and pumpkin spice.
4. Fold dry into wet—don’t overmix.
5. Divide into muffin tin, filling each about 3/4 full.
6. Top optionally with sugar or nuts.
7. Bake 20–24 minutes or until a toothpick comes out clean.
8. Cool on wire rack for 10 minutes before serving.
Notes
Pumpkin is rich in vitamin A, fiber, and antioxidants.
Add chocolate chips or nuts for variation.
Store in airtight container for 3 days, refrigerate up to 1 week, or freeze for 3 months.
Reheat gently in foil at 300°F for 8 minutes.
