Description
An easy, delicious snack using pumpkin puree, oats, and warm spices. No oven required.
Ingredients
1 cup rolled oats
1/2 cup canned unsweetened pumpkin
2 tbsp maple syrup
1/4 cup almond or sunflower butter
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tbsp chia seeds (optional)
1/4 cup mini dairy-free chocolate chips (optional)
Pinch of sea salt
Instructions
Combine oats, pumpkin, maple syrup, nut butter, cinnamon, and nutmeg in a bowl.
Stir to form a thick dough.
Mix in chia seeds and chocolate chips.
Roll into 1-inch balls using a scoop or spoon.
Chill in fridge for 30 minutes until firm.
Store in airtight container in fridge up to 1 week or freeze for longer storage.
Notes
Swap nut butter with tahini for a nut-free version.
Add pumpkin spice mix to increase flavor.
