Ingredients
1 medium cooked sweet potato
1 can halal-certified tuna, drained
1 tbsp tahini or hummus
1 tsp sesame oil
2 tbsp Greek yogurt or plant-based yogurt
1/2 tsp garlic powder
1 tsp lemon juice
Sea salt & cracked black pepper to taste
1 green onion, thinly sliced
Chopped cucumber or radish (optional)
Instructions
Toast the sweet potato slices or warm them in a skillet with olive oil.
Mix drained tuna, sesame oil, lemon juice, Greek yogurt, garlic powder, salt, and pepper in a bowl.
Spread tahini or hummus on the sweet potato toast.
Top with the seasoned tuna mixture and garnish with chopped green onion and optional veggies.
Notes
Use pre-cooked sweet potatoes or pre-made sweet potato toast to save time.
