Description

Ingredients

1 lb boneless skinless chicken thighs or breast, diced

1 tbsp Cajun seasoning

1 tbsp olive oil

1 red bell pepper, diced

2 garlic cloves, minced

1 cup uncooked jasmine rice

2.25 cups chicken broth

0.5 cup frozen corn

0.5 cup cooked black beans

Fresh parsley or green onions, for garnish


Instructions

Heat olive oil in a skillet over medium heat.

Season diced chicken with Cajun seasoning and cook until browned.

Add garlic and bell pepper and sauté until softened.

Stir in rice, broth, corn, and beans. Mix well.

Bring to a boil, then cover and simmer for 15 minutes.

Turn off heat and let sit, covered, for 5 minutes.

Fluff gently and garnish with herbs.

Notes

Substitute zucchini for bell pepper or use frozen veg mix.

Use brown rice and adjust cooking time if desired.
